This is a quick and easy meal to throw together. We typically use ground beef however you can substitute with whatever protein you like. Great for busy nights and for quick meal prep for work lunches!
We like to place all of the ingredients into their own serving bowls on the dinner table and make our bowls there. When we are short on time, we sometimes build the bowls in the kitchen and bring them to the table. Whatever works for you.
These go great with your favorite hot sauce. Cholula is my go to!
Feel free to add in whatever you like. Try lettuce, onion cooked with the meat, olives, etc.
Another good option is grilled chicken and bacon!
Taco Bowls
Ingredients
- 1 lb 80/20 Ground Beef
- 1 Can Black Beans
- Mild Cheddar Cheese
- 1 Cup Jasmine Rice
- Roma Tomatoes
- Jalapenos
- Sour Cream
- Corn (Canned is fine)
- Fajita Seasoning
- 1 Tbsp Avocado Oil
- Pinch of Kosher Salt
Instructions
- Brown ground beef in a non stick pan. If there is too much grease, drain some of it off. You will want some in the pan to mix with the seasoning. Add in fajita seasoning to taste. Place in a serving bowl or set aside.
- Cut up tomatoes into small pieces and set aside.
- In a mesh strainer add the jasmine rice and rinse under water until the water runs clear and set aside.
- In a medium pot add in 1 cup of water, salt, and splash of avocado oil and bring to a boil.
- As soon as the water starts boiling, add rice and cover with a see through lid and set heat to as low as it goes. Set yourself a timer for 12 minutes and keep the lid closed. Keep an eye on the water, if the water runs out turn off the heat and relocate the pot to a cool spot on the stove or elsewhere to rest. Its a good idea to let the rice sit for a few minutes before opening the lid. Use a fork to fluff up the rice and put into a serving bowl.
